"fried dandelions"
Just pick the dandelion heads and make a batter (either dip heads in beaten egg and then into flour/spice mix, or make a thick liquid batter with flour/spice/ milk or water and dip in that). Fry in some hot oil. kids love it!!!
Just make sure the dandelions come from a yard that hasn't used any fertilizers or chemicals like weed killer
"Cream of Dandelion Soup"...
4 cups chopped dandelion leaves
Water
1 cup chopped leeks or onions
6 cloves garlic, minced
1 TBSP. butter or olive oil
2 cups dandelion flower petals
2 cups dandelion buds
2 tsp. salt
2 cups half-n-half or heavy cream
Boil dandelion leaves in 6 cups water for a couple of minutes and pour off (bitter) water. Boil again in different water and drain. Saute leeks/onions and garlic in butter/olive oil until tender. Add 4 cups water to leeks/onion mix and add pre-boiled and drained dandelion leaves, plus flower petals, buds, and salt. Simmer gently at least 45 minutes. Add cream and simmer a few minutes more. Garnish with a few saved flower petals.
